Oatmeal Scotchies!

On a cold, rainy night what's better than baking delicious cookies?! These cookies are definitely a go-to when it comes to baking and they are always satisfying...not to mention addicting! The sweetness of the butterscotch and texture of the oatmeal add to the appeal.


1 1/4 cups all purpose flour
1 tsp. baking soda
1/2 tsp. ground cinnamon
1/2 tsp. salt
1 cup(2 sticks) butter (softened)
3/4 cup granulated sugar
3/4 cup brown sugar(packed)
2 large eggs
1 tsp. vanilla extract(or orange zest)
3 cups quick or old-fashioned oats
1 2/3 cup(11 oz pkg.) Butterscotch chips (I use Nestle)

Preheat oven to 375 degrees

In small bowl, mix flour, baking soda, cinnamon, & salt

In large bowl, beat butter, both types of sugar, eggs, & vanilla. Then slowly beat in the dry flour mixture. 

Stir in oats and butterscotch chips. On ungreased, baking sheets drop tablespoon sized rounds. 
For chewy cookies, bake 7-8 minutes and for crispier cookies bake for 9-10 minutes. I enjoy them a little chewy. Let them cool for a couple minutes on the cookie sheets before transferring them.
