Fav Pins of the Week

Is it really Wednesday? Thank goodness!! Even though I've only been through one school day this week, it was tough. Yesterday was so exhausting for me.

It's like I never even had a long weekend. I really wanted to get out a workout in but was too tired. Don't you hate that?! I needed 2 coffees and a diet coke today....It was that bad!

Pumpkin!!!

In honor of nearly every blogger's favorite fall drink making its annual debut today, I decided to do another post inspired by taste/color.

Now let's not all rush to Starbucks all at once, that line would be wayyyyy to long!

Anyone else going to Starbucks today? The pumpkin spice latte coming back today pretty much marks the beginning of Fall.

And even better, it means that it's even closer to when the Starbucks red holiday cups coming!!!!

Happy Pinning!

It's finally Wednesday!! I think I'm really going to like Wednesdays for the next few weeks because I get to SLEEP IN til 7:30!!! Wooohooo! It's funny how 1 week of grad school can make 7:30 "sleeping in." Only one 4 hour lecture today!! :-)

So because it's Wednesday it's ofcourse Oh so Pinteresting Wednesday and the first 2 pins is very near and dear to my heart so I hope you enjoy. It's especially special (lol?) now because I can't make it through my 7:30 am classes without none other than COFFEE!!! FYI, I used to be a Garfield and Get Fuzzy addict back in high school.

Carmelized Peach Salad

I saw a picture of a new salad that California Pizza Kitchen had on their menu that looked tasty and pretty easy, so I figured I'd give it a try. Mine is a little different than theirs, I only looked at the picture, not the online description. But it served as a good inspiration!
CPK's Caramelized Peach Salad
The only thing that needs to be cooked are the peaches so I decided to grill them.
4 ripe peaches
1 1/4 teaspoon vanilla extract
1/4 cup brown sugar

Preheat grill to medium high heat. Cut peaches in half and remove the pit. Cut the halves in half and toss in a bowl with extract and brown sugar. Let sit for 15 minutes while grill heats up. Place them skin side down for about 3 minutes until the skin is slightly charred. Then turn the peaches and grill about 1 minute on the remaining sides until you get grill marks. Let them cool a few minutes before tossing them in the salad.

For the rest of the salad I used a head of romaine, chopped toasted walnuts, feta cheese, carrots, and cucumbers. When I added the peaches I also threw in a little champagne vinaigrette.
It was a big hit!! The caramelized peaches added some sweetness but it wasn't overly sweet. It was definitely an easy way to spruce up a salad.

Spaghetti Squash& Kale

I love spaghetti but sometimes I don't feel like eating all that wheat so spaghetti squash is a fabulous alternative to satisfy a pasta craving. You can cook it and add marina sauce and eat up but I like trying different things to make it more interesting.

This time I tried a recipe that included kale. It was pretty good and I think I'll make it again but change a few things.

1 spaghetti squash
1 bunch kale
1 ½ cups cooked chickpeas (or 1 can)
3 cloves garlic
olive oil
sea salt
pinch of crushed red pepper flakes
¾ cup toasted walnuts
fresh Parmesan  cheese

Directions:
1. Preheat oven to 400°F.
2. Cut spaghetti squash in half lengthwise, remove the seeds, rubbing the inside of each half with a drizzle of olive oil, then seasoning with salt and pepper. Place face down on a lined baking tray and cook for about 45 minutes.
3. While wash kale, cut away the rib, and roughly chop kale.
4. Heat oil in a large pan, then add minced garlic, crushed red pepper to taste, and a pinch of sea salt. Cook until fragrant, then add chopped kale and cook until the leaves are bright green and just starting to lose structure. Throw in the chickpeas and cook just to warm. Remove from heat.
5. After squash is done, remove from oven and let cool until you can handle it. Using a fork, scrape out the insides. Place all strands in a bowl, and toss with the kale and chickpea mixture.  Sprinkle with chopped toasted walnuts and shaved Parmesan. Enjoy.

I needed to add a little more salt and pepper once served, so be sure to season to taste. Next time I try this I think I'll add some lemon juice to freshen it up a little bit but overall it was pretty good.

Weekend Recap!

This past weekend was nice and relaxing. I'm trying to enjoy as many of them as I can before school starts and then my weekends will consist of studying a bunch and trying to keep my sanity.

On a hunt at night for the perfect dessert my boyfriend and I decided to stop by one of our favorite restaurants Lazy Dog Cafe.  It happened to be happy hour so we decided to get some drinks at the bar.
The boyfriend got some pizza and we shared a dessert which of course I forgot to take a picture of! I was working on my 2nd pink lemonade drop martini...oops! It was chocolaty and peanut buttery though! It was pretty fun people watching and talking to others at the bar who were also people watching.

Saturday I did some shopping with mom, we didn't get anything exciting enough to report though. After that I waited for my man to get back from work so we could do "Cheeseburger Saturday."

Yup, you read right Cheeseburger Saturday! I eat pretty well during the week but during the weekend I need at least one greasy meal complete with french fries. So we went to In 'N Out. It did not disappoint.

Then on Sunday I putz around the house for most of the day and made some cookies. Bethenny Frankel's Oatmeal Banana Chocolate Chip cookies. I've made them a few times and they are just sooooo good! Also, healthy and filling! I also have come to the conclusion that all the cookies I make look like turds when photographed but they taste delicious! These are a must try!

Mint please!

The past few days, I've been really drawn to mint. Whether it's the color, or flavor. There is just something so relaxing about mint that I can't get enough of!

It's fabulous in fashion and food! What's more to love about it?!
